Regal Mushrooms is part of The White Prince Group – a fourth-generation, family-owned agribusiness that oversees a network of independent mushroom farms operated by the Tolson family. White Prince accounts for about 25% of the national mushroom market.
Based in Londonderry, NSW, Regal Mushrooms is the largest mushroom farm in the White Prince Group and the largest mushroom grower in the state. Every day, the team harvests about 105 tonnes of fresh, high quality white Button and Flat Mushrooms.
These mushrooms are then distributed to food retailers all over the country. When you buy your favourite mushrooms from your local Coles, Woolworths and Aldi, it’s likely you’re buying a mushroom grown on a farm in the White Prince Group.
Clint Tolson is CEO at Regal Mushrooms. “Technology has always played a vital role in our business. We take an innovative approach to how we grow, process and distribute our mushrooms. Right now, our focus is on technology that supports automation, particularly across admin functions, production processes, and data collection throughout the business,” he explains.
When Regal Mushrooms and ThinkMation were first introduced, the key driver for Clint was a much-needed upgrade to his legacy operations platform.
Our legacy system was a Microsoft Access build, created in the late 1990s,” explains Clint. “It’s done well over the years, but with Microsoft Access no longer supported, and more innovative cloud-based solutions now available from Microsoft, we saw this as the perfect time to create something better.
Regal Mushroom has always collected a huge amount of data. In fact, every single punnet of mushrooms is tracked: where it was grown, in which room, who picked it, the size, and the quality. There’s immense potential value in that data, but the potential can only be realised if Clint and the team are able to analyse trends, forecast production, and make smarter decisions around people and operations.

The average tenure for people within Regal’s harvesting team is four or five years. This strong culture of commitment and loyalty is partly due to the recruitment and training programs in place, and the high-quality tools available to the harvesting teams.

Even though Regal’s mushrooms are grown indoors in highly controlled environments, climate change is having a significant impact on the conditions necessary for producing the perfect mushroom.
Rising temperatures, increased humidity fluctuations, and more frequent power outages are impacting yields, quality, and energy costs in climate-sensitive mushroom production.
